So where did hotpot come from?
起源



During the Ming and early Qing Dynasties, the workers at the port on the banks of the Yangtze and Jialing rivers used to sit together around a pot full of the internal organs of cows, pigs or other animals, boiling in an oily broth of spices such as Sichuan pepper, ginger and more. It was a cheap dish that was easy to get, and was a perfect escape from the cold. Since those days, the dish has gradually developed into a special delicacy in Chongqing, and is now available in various forms such as fish hot pot, chuan chuan and more at some of the municipality's 50,000 hotpot restaurants!

重庆火锅起源于明末清初的重庆嘉陵江畔。是码头船工纤夫的粗放餐饮方式,原料主要是牛毛肚、猪黄喉、鸭肠、牛血旺等动物内脏,在放有各种香料、辣椒,姜等的锅中煮熟即食。现在火锅已发展成重庆最为特色的一种美食,有多家50,000家火锅店,并衍生出各种各样的火锅形式,如串串、鱼火锅等。在市内就的一些餐厅有各种形式,例如鱼火锅,串串等等!

A hotpot dinner is always fun when you get together with family and friends. You can cook any vegetables and meats, like mushrooms, dumplings, and fish, and pair it perfectly with an ice cold beer. Hotpot moments can create lovely memories and are enjoyable occasions, with everyone contributing to the cooking.



与家人和朋友聚会时,很多人会选择吃火锅。你可以煮任何你想吃的,比如蔬菜、肉、蘑菇,饺子和鱼等,再配上一瓶冰啤酒。而且每个人都可以参与其中,一起动手创造出美好的回忆。



What do you need?

Soup base
火锅底料



First things first - your base. Generally there are two types of base for hotpot: the spicy one (红汤hóng tāng) and the more mild one (清汤 qīng tāng). Here we are showing you the spicy version, and soup bases can be bought in any supermarket and even small grocery stores around town. They are made up of butter, oil, bean paste, ginger, garlic, sugar, sichuan pepper, chili, and more.


火锅的汤底通常分两种:辣的(红汤hóngtāng)不辣的(清汤qīngtāng)。这里我们会介绍红汤汤底,你可以在任何超市或者便利店买到。红汤汤底通常由牛油,色拉油,豆瓣酱,生姜,大蒜,花椒,干辣椒等熬制而成。

A pot

The size of the pot will vary depending on the amount of people partaking in your hotpot dinner. If you have a group of people, purchase a wider one, and if you want to try both spicy and mild bases, you will need a pot which is divided into two parts. You can buy these online or at supermarket.

锅的大小根据人数来定,如果你有很多朋友或者家人一起,就选择大一点的锅。如果你想同时尝试红汤和清汤,可以买一个分为两部分的锅。锅具在网上或者超市都可以买到。

Instead of heating up the broth on a stove, an electric cooker is much more convenient as it can be placed anywhere at home.Again you can buy these online or at most good supermarkets.

Ingredients

The list of ingredients is as broad as your imagination, as you can cook pretty much anything in hotpot! Tripe, intestine and cow throat are the main dishes local people like to eat, but if that's not to your taste, there are also plenty of other choices of meat and a wide range of vegetables such as lotus roots, tofu skin, enoki mushroom, potato slices, beef slices, meatballs, shrimp paste, sweet potato noodles, cabbage, and lettuce leaves.

Now you've got everything you need, how do you make it?

Step 1: Set up

Place the electric cooker on the table and a pot with water on top. Heat it until it boils.

Step 2: Boil soup base

For expats or those not used to the intenstiy of Chongqing spice, we recommend using about 30-50% of the soup base packet, because it can get very spicy if you add too much. Add this to the boiling waater along with an optional 2-3 spring onions.


第二步 放入底料
对于不太能吃辣的朋友,建议只放入约30-50%的底料,如果一次性加很多,就会变的很辣。还可加2-3段大葱一起煮沸。



Step 3 Prepare the dipping sauce


The dipping sauce is what you will dip your cooked food in after you've removed it from the hotpot and before you eat it. There are many different kinds of dipping sauce based on everyone's personal tastes, and it adds extra delicious flavour to your food.

Classic dipping sauce: sesame oil + minced garlic

Add other sauces according to your own preferences: chopped green onion, coriander, chopped fresh peppers, salt, oyster sauce, vinegar, soy sauce, sesame paste, and smashed peanuts. Someone even suggested using cold beer as a base for their dipping sauce - so go wild!

第三部 油碟
油碟是将煮好的食物放入碗中的蘸料。根据个人口味不同,油碟的搭配方式也多种多样。


经典款:香油+蒜末

根据自己的喜好添加其他调味料:香油、葱花,香菜,辣椒圈,盐,蚝油,醋,酱油,芝麻酱和花生脆。甚至有人用冰啤酒作为蘸酱—够猛!



Step 4 Cook ingredients


Insert your ingredients into the hotpot and wait until they are fully cooked. Leafy vegetable are best for mild hot pot soup baseand they can be very spicy if cooked in a spicy base!

第四部 开烫

把食材放入锅中至煮熟。不建议将叶类蔬菜放入红汤中,因为会吃起来很辣。



Step 5 Enjoy!


Take your cold beer, remove the food from the base and dip into your dipping sauce of choice. Yummy!

第五部 开吃

开一瓶冰啤酒,开始你的美味之旅吧!



Tips

Due to the very spicy taste, it's better to eat something like yogurt or congee before.
因食物辛辣,建议吃之前喝点酸奶或粥。


It's also recommended to order a portion of rice to absorb some of the oil
因重油,建议用米饭吸油后再吃。
